A London Fog by Léonie Bouchet, made with Boring® Oat Milk. Despite the name, it wasn’t invented in London. It was first made in Vancouver in the 1990s by Mary Loria, who was pregnant and looking for something gentler than coffee. Earl Grey, steamed milk, vanilla. Soft, practical, and comforting. These days it’s a café staple for people who want the ritual without the espresso theatrics.
Ingredients
1 strong cup Earl Grey tea (1 tea bag or about 2 g loose leaf)
180 ml Boring Oat
½ tsp vanilla extract or vanilla paste
1 tsp maple syrup
a pinch of flaky sea salt
1 strip lemon peel (optional)
Method
1. Brew the Earl Grey in hot water for 3–4 minutes, then remove the tea.
2. In a small cup, mix the maple syrup, vanilla and a pinch of flaky salt to form a lightly salted maple syrup.
3. Add the lemon peel to the Boring Oat Barista milk and gently warm it in a small saucepan until steaming. Remove the peel and froth lightly with a whisk or milk frother.
4. In a mug or glass, add the maple-vanilla syrup, pour in the tea, then top with the warm oat milk, finishing with a little extra foam.
Optional finish
– a dusting of bergamot zest or lemon zest
– a sprinkle of Earl Grey tea powder
